So far, so good. I complain a lot, but I can't complain about the dinners we've had lately. They are tasty, easy to make, and they are adding such color and variety to our plates.
This one is a mish mash of different recipes that I tweaked, but again, so easy.
In a bowl, mix together the following:
- 2 cups of low sodium chicken broth
- 1 cup of low sodium soy sauce
- 3/4 cup of balsamic vinegar
- 2 minced garlic cloves
- 1tsp Sriracha
Put this in a pan and bring to a boil. Add 2 pounds of shrimp, and simmer for 25 minutes.
Cook your quinoa as directed. Steam a head of broccoli.
Once your sauce has thickened, serve over quinoa and broccoli.
